Glutinous Rice Dumpling
Tuen Ng festival, known as Dragon Boat Festival. When Tuen Ng festival is coming close, some people will make glutinous rice dumplings by themselves, while the others will purchase ready-made glutinous rice dumplings from food shops, supermarkets or restaurants.
Glutinous rice dumpling is wrapped by lotus or bamboo leaves, and commonly the main ingredient of the dumpling is glutinous rice. However, in order to cater for customer’s different tastes, food manufacturer will produce various kind of flavor by manipulating the ingredients of the stuffing inside the dumplings. The ingredients usually used in stuffing are mung bean, pork, salted egg yolk, chestnut, mushroom, red bean paste, or other less common ingredients such as abalone and dried scallop etc.
Glutinous Rice dumpling is a potentially high risk food if it is not properly handled and not thoroughly cooked. Therefore, it is necessary for the food manufacturer to ensure that the dumplings are safe and fit for human consumption before sale. To achieve high quality and safe food products, of which meeting the Hong Kong Food safety standard, chemical testing and microbiological testing should be conducted on the raw materials used to making glutinous rice dumplings and the final product.

1. Aerobic Plate Count
2. Escherichia coli
B. Food Safety:
1. Staphylococcus aureus
2. Bacillus cereus
3. Salmonella spp.
4. Vibrio parahaemolyticus and Vibrio cholera (If the ingredient contain seafood)
